Greek-style Potato Salad
Scrub and slice potatoes

Add to steaming basket and steam or boil until fork tender

While they steam add sliced shallot/onion, parsley, dill, (mint optional) & lemon juice

Drain potatoes and add them straight into the large bowl with herbs

Drizzle with olive oil and season well with salt and pepper, and a pinch of oregano

I also love to toss in some capers as well and serve either warm or cold with extra lemon wedges.
