Green Chili Cornbread With Whipped Honey Butter
Using a whisk, combine 1.25 cup of cornmeal, 1.25 cup all purpose flour, 1.5 teaspoon salt, 1 teaspoon baking soda and 1 tablespoon baking powder

Using a hand mixer, cream together 1/2 cup of butter (1 stick) and 1/4 cup of sugar.

Add 2 eggs, 1/2 cup of sour cream and continue to mix until smooth and consistent mixture texture forms.

Add the flour mixture and 1.25 cups of milk to the butter mixture in alternating thirds (1/3 flour, 1/3 milk, 1/3 flour, 1/3 milk, etc.)

Mix in 2 cups of defrosted corn kernels and 2 - 7 ounce cans of green chilies.

Grease baking dish and fill with batter. Bake at 400 degrees until golden brown.

*Note baking time will vary by baking dish. Brownie squares 18 minutes. Muffin tins 15 -18 minutes. Casserole dish 35 minutes.

While the cornbread is in the oven, make the whipped honey butter by combining 1/2 cup of butter, 1/4 cup of honey and whipping for 2-3 minutes.
