Grilled Avocado Shrimp Ceviche
Remove tails from shrimp by pinching at the very back, to release shrimp from shell

If using large shrimp, cut into 1/2 inch chunks or leave small shrimp whole

Add juice of 6 limes, thinly sliced serrano pepper, & thinly sliced shallot to the shrimp

Add cilantro and stir to combine all ingredients. Refrigerate 30 min & shrimp will ‘cook’ in lime juice. They will turn from grey to pink when done

Cut avocados in half & remove pits. Brush olive oil & sprinkle salt/pepper over the top

Over high heat, grill avocados for 5 minutes or until char marks form. Remove from grill & allow to cool.
