Grilled Eggplant & Goat Cheese Salad
Cut the eggplants in thick slices on a diagonal

Grill on a lightly greased skillet or in a sandwich press

Turn sides and cook from other side too till golden and tender

Lightly toast pine nuts and then spread on a plate to cool down

Layer the eggplants on serving platter

Add store bought or home made char-grilled peppers

Layer on top of eggplants

Add fresh basil & mint

Tear the leaves and add to the platter

Take goat cheese

Crumble the cheese on top

Drizzle olive oil and balsamic vinegar, freshly crushed blackpepper

Top with toasted pine nuts
