Grilled Moroccan Chicken With Apricots
Place chicken breast down - cut bone out

Flip chicken and flatten using your hand to push down the centre of chicken

Reserve 1/4 tsp of Moroccan seasoning to toss with the apricots

Add lemon juice & zest, olive oil, pomegranate molasses & garlic to the mix & whisk

Place chicken in plastic bag

Give the bag a good squeeze and get the seasoning spread all over the chicken then remove and grill

Toss apricots & shallots with honey pomegranate molasses, spice blend, lemon juice & grill

Serve chicken with the jammy apricots and glaze
