season lamb with salt & pepper ~ brown in olive oil

remove lamb from pan and toss with flour

sauté onion, celery and garlic

stir in tomato paste, Guinness and fresh thyme

add beef stock and the lamb

simmer for 1 1/2 hours

add potatoes, carrots & parsnips ~ simmer for 30 minutes
