Cube the pork and peel the garlic cloves

Pick your container

In a large airtight container layer pork, garlic, thyme and salt

Pour white vinegar over the pork and use a spoon to release all air bubbles from the container

Seal with cling film to reduce mixture contact with air

Seal the container and place in a dark area for 7 days

Remove the container and drain the pork in a colander

The garlic might be blue!

Prepare a large roasting tray with olive oil and heat it in your oven at 350F

in the hot pan with the oil add pork and roast for about 60 minutes

Remove from oven and loosen from pan with a wooden spoon

Serve with raw veggie salad and rice with buttered bread!
