Halawet El Jibn (stuffed sweet Cheese)
Besides a strong arm, for the dough you will need...

1 1/4 cup sweet cheese 1/2 cup mozzarella cheese

1 cup semolina

1.5 cups water

1/2 cup sugar 1 tbsp rose water 1 tbsp simple syrup

For the stuffing you will need...

1 tbsp simple syrup 1/2 tsp rose water 1 tbsp sugar

1/2 cup crushed pistachios 1/4 cup crushed walnuts

Using a nonstick pot on medium heat add water, sugar & rose water until dissolved

Stir in sweet cheese & mozzarella cheese until it begins to melt

Once cheese begins to melt, slowly add semolina while stirring. It will start to thicken

Add simple syrup and keep mixing and stretching

After a few minutes it should look like this

Add a little bit of simple syrup and transfer dough onto a flat surface

Divide dough into 3 pieces (careful, it’s hot)

Stretch into a big thin layer. Try not to rip

If you prefer to eat without nuts, you can cut & enjoy. It can be eaten warm or cold

For stuffing, combine all ingredients then spread along the edge, roll & cut into pieces.
