Harry Potter Birthday Cake

Preheat oven to 325 degrees F and grease and flour two 9-inch rounds

Whisk flour, sugar, baking soda, and salt in a large mixing bowl

Whisk sour cream, oil, egg whites, and almond extract in another bowl

Add the sour cream mixture to the flour mixture, and mix on medium speed for about 1 minute

Divide the batter between your pans and rap each one sharply on the counter

Bake cakes for 30-40 minutes or until a knife comes out clean.

Cool cakes completely

Whip 1 cup of softened butter

Add 1 teaspoon of almond extract and 1 cup of powdered sugar

Then 2 more cups of powdered sugar

And a tablespoon of cherry juice

Add powdered sugar and cherry juice and whip until it reaches the desired consistency and color

I separated out some frosting to decorate with and added cherry pieces to the rest

Apply a layer of frosting and cherries on top of one of the cake rounds

Add the other layer and frost the whole cake
