Hatch Green Chile Enchiladas
First, start to make your enchilada sauce - Roast hatch green chiles!

Cook chicken, one onion, cilantro and water in quick cooker for 15 minutes

Chop half an onion

Add pressed garlic

Peel and de-seed chiles, then pulse in blender

Add Chile, broth and spices to pan

Shred cooked chicken

Dredge tortilla in enchilada sauce, add chicken...

Add chopped raw onion...

Add cheese, then roll and place in baking dish

Add lots of cheese, bake at 400° for 10 minutes
