Healthier Chicken & Broccoli Casserole
Add 1 TB avocado oil to 1 lb of chicken breast. Bake at 400 for 20 min
Add 1 TB avocado oil to 1 lb chopper broccoli. Bake 400 for 20 minutes.
Fry bacon whole chicken and broccoli cook.
Add 1/2 diced onion, 2 TB ghee, and 1 tsp minced onion to a pan. Cook on stovetop until fragrant.
Whisk 2 cups chicken bone broth and 2 TB tapioca flour together.
In a separate bowl add full fat coconut milk, 2TB nutritional yeast, and 1 TB mustard.
Add chicken broth mix to cooked onion. Then add coconut milk mix. Heat to boiling. Then simmer until thickened.
Add diced chicken and broccoli to pan. Cover with cauliflower mix. Top with bacon. Bake at 375 for 30 minutes.
