Healthiest Vegan Mac & Cheese Ever
Pre-heat oven to 400F
1 cup cashews soaked for at least 2 hours. Rinse after.
1 cup steamed or boiled carrots [fork tender]
2 Tbsp. nutritional yeast
1 tsp sea salt
1/4 tsp chipotle chilli powder [optional]
1/5 tsp cayenne pepper
1 tsp garlic
Juice of 1 lemon [about 2 Tbsp]
1 cup marinara sauce
Add all ingredients to to the blender and mix until smooth. Add splash of water if needed.
Spoon the sauce into dish and smooth out.
Bake for 20 min, in the meantime...
Sauté cauliflower rice in a large skillet over medium heat. No oil needed.
Once sauce is ready...
Mix sauce with cauliflower rice. Serve immediately.
Use no sugar added ketchup to keep it low carb!
