Healthy Buffalo Chicken Soup
Diced sweet potato, onion, celery, carrots and garlic.

Sauté over medium high heat in a tablespoon of oil, stirring occasionally for 5-6 minutes

Spices next! Chili powder, cumin, paprika and salt. Stir to combine.

Add 8 oz tomato sauce and 2 cups of broth. My broth is still frozen from the freezer but it’s no biggie!

Add a pound of cooked, diced chicken breast.

And 2 Tbsp hot sauce (3 Tbsp if you really like spice! 🔥 we love Franks

Cover and simmer 15-20 minutes.

Add toppings of choice - shredded cheddar, blue cheese crumbles, green onion or avocado slices. Yum!
