Healthy Carrot Muffins
Preheat your oven to 350°F

Lightly coat muffin pan with nonstick cooking spray

Whisk eggs together

Add in greek yogurt and whisk together until smooth

Mix in pure maple syrup, milk & vanilla extract

Add in shredded carrots and whole wheat flour

Add baking powder & cinnamon. Mix together until well combined

Use ice cream scoop to put batter into each muffin tin

Bake for 20 minutes

Once out of oven, let cool for 5 minutes

Place muffins onto cooling rack

Let sit for 20-30 minutes before consuming

Add cream cheese frosting to kick it up a notch
