Choose firm shiny eggplant.

Cut eggplant into 1/2" slices.

Cut slices into “fries.”

Set up a work station with the eggplant, flour, egg mixture, and panko.

Lightly coat the eggplant in flour...

then egg mixture...

and finally with the panko.

Place fries on a sheet pan with a rack, coat with cooking spray.

Transfer to a preheated 425- degree oven; bake for 15 minutes or until golden.

Turn fries over and spray a little more; return to oven.

Once crisp and golden, they are ready.
