Healthy Maple And Coconut Cookies!

Coconut Oil (solid)
3/4 of half a cup

Preheat oven to 350F

Add the solid coconut oil and maple syrup and beat until combined.

Add egg yolk and vanilla and beat until combined.

Divide 1/2 cup: 3/4 should be almond flour and 1/4 coconut flour.

Evenly add the flour, baking soda, baking powder and salt, and beat until combined.

Finally add the collagen and the shredded coconut and beat until combined.

Flatten the batter as best as you can and divide in quarters. From each quarter make 3 cookies.

Space cookies evenly on a baking sheet and press down slightly. And bake for 11-13 min.

Space them good because they expand A LOT!! So be careful with that!
