Healthy Pumpkin Spice Cake Cookies
Add ¾ cup pure pumpkin purée, 1 cup raw almond butter, and 1 tbsp vanilla extract.

Whisk well until fully mixed.

Add ¼ cup coconut sugar, 2 tsp pumpkin pie spice, 1 tsp cinnamon, and ⅛ tsp sea salt.

Mix well, then add 1 tbsp coconut flour.

Whisk out any lumps until batter is fully mixed and smooth. Option to use electric mixer.

Line baking sheet with parchment paper or baking mat. Scoop 2 heaping tbsp of batter per cookie.

Form cookie batter into large, round, fluffy cookies.

Bake for 16-18 min at 350° until firm and lightly golden.

Remove from oven and cool for 10 minutes.

Sprinkle with pumpkin spice and enjoy, or use for my whoopie pie recipe with maple whipped cream!
