Healthy Shrimp Power Bowl
Dice red and orange peppers

Dice a small red onion

Shred 4 cloves of garlic and add a few drops olive oil

Slice one bunch of asparagus on the bias

Place 3 ears of corn in microwave for 3 minutes to steam, then cool for 5 mins.

Clean and devein shrimp

Add a tablespoon vegetable oil and season shrimp

Remove husk after corn cools and cut kernels off cobs

Sauté corn in cast iron, adding some Cajun seasoning

Set corn aside, cover with foil.

Heat up 2 cast iron pans, add onions to one and shrimp to other

Add garlic after onions have sautéed for 2 minutes

Add asparagus and season

Add peppers and stir

Turn shrimp over

Add corn into veggie mixture

Assemble veggies in bowl & top with shrimp
