Healthy Strawberry Almond Bars
Chopped Strawberries, 2 Cups
Fruit Syrup, 80g
Granulated Sugar, 20g
Oats, 220g
Butter, 130g
Apple Butter, 80g
Almond Butter, 80g
Egg, 1 Large
Flaked Almonds, 50
Warm Water, 2 tbsp
Mix the cornstarch with the warm water until it has dissolved. Set aside

In a small sauce pan, add the strawberries & sugar

Add the fruit syrup

Cover and boil for 1 minute on medium heat while stirring occasionally

Remove from heat and stir in the pre-mixed cornstarch. Set aside to thicken and cool.

Add oats, egg, almond butter, butter, cinnamon, and apple butter to a small bowl

Mix together till fully combined

Dough should look like this

Reserve 1/2 cup of the dough for later. Place rest of the dough into a greased baking dish.

Add the almond flakes to the remaining dough and work the mixture into a crumble

Spread the strawberry filling on the dough. Then sprinkle the crumble over the filling.

Bake in the oven at 170°C for 18-20 mins.

Enjoy warm. Recipe makes 9 bars.
