Mix flour, sugar, baking soda, and salt in a large bowl. Add butter and cut in with pastry cutter.

Add batter to 2 greased loaf pans. Feel free to weigh to get them even, but it isn't required.

Run a knife down the middle of each loaf to create a line. Why? So they bake and rise evenly.

Bake at 350 degrees for 50-60 minutes. Rub the tops of the loaves with butter while still hot.

Let cool in the pans on their sides for 10-15 minutes to ensure they release cleanly.

Wait until loaves are cool before slicing. Store in a container on your counter up to 3 days.
