Herb and Onion Pork Loin
Peel and cut two carrots diagonally.

Cut 1 lb. potatoes into 2-inch chunks.

Season both sides of 3 lb. pork loin with salt.

Combine 1.5 cups chicken broth with 3 tbsp. Herb and Onion Seasoning.

Heat 1 tbsp. oil in a Dutch oven. Brown pork on both sides, about 5 minutes.

Cover with vegetables.

Cover pork and vegetables with broth.

Cover Dutch oven and bake at 350 for 30-35 minutes.

Remove pork and veggies from Dutch oven, and place on a platter.

Bring gravy to a boil, add 4 tsp. cornstarch, 3 tbsp. water, and whisk until thickened.

Serve pork and vegetables with gravy.
