Clean the fish by removing any remaining yellow parts.

Slice the lemons.

Measure out 6 feet of string.

Cut the thyme, parsley, oregano, cilantro and sage from the garden.

Wash the herbs.

Divide the herbs into four equal bunches.

Season the inside and outside with salt and pepper.

Add the garlic, lemon and bundle of herbs inside the fish.

Wrap the fish 5 times and tie off the end of the rope.

Rub the outside of the fish with oil.

Refrigerate for at least 3 hours before cooking.

Pre heat grill to 500 degrees.

Put the fish in the skillets, spray them on each side and close the skillets.

Place the fish on the grill for 7-8 minutes and turn up the heat to high.

Flip the fish every minute.

Don’t be alarmed if there’s fire. It’s just grease dripping.

Stay calm if the fish pops out. Simply put it back in the skillet with tongs.

When the fish looks like this, take them off the grill.

Cut the rope and remove all the pieces.
