In a large bowl, mix together 2 tsp of anchovy paste and 1 clove of minced garlic

Add 2 tbs chopped dill

Mix in 1 tbs of red wine vinegar and stir to dissolve anchovy paste

Add 1/2 cup of red wine vinegar

Add 2 tsp sugar

Add 2 tbs chives

Add 1 tbs parsley

Add 2 tbs sliced green onions (greens and some white)

Season with salt

Pour herb and vinegar mixture into a large jar with 3/4 cup of olive oil

Add 1/2 cup of cubed pepper jack cheese

The cheese will marinate in the herby dressing

Serve over Italian lettuce mix with cucumbers, tomato, bacon and loads of cracked black pepper
