Hidden Vegetable Tomato Sauce

Fill one tin/400ml

1 finely diced
Onion
1 stick, finely chopped
Celery

Zucchini/Courgette
2 cloves, minced
Garlic
1 tblsp
Olive Oil
3 x 400g tins
Chopped Tomatoes
1 finely chopped
Leek
1 tblsp
Tomato Paste/Puree
1 1/2 tblsp
Maple Syrup
1 tsp
Dried Oregano
4 tsp
Vegetable stock
1tsp
Sea Salt
Pinch
Black Pepper

Bay Leaf
Prepare the vegetables

Heat the olive oil in a saucepan and sauté the onion, leek, celery, carrots, courgette and garlic

After 5 minutes add the tomatoes, water, tomato puree, oregano, maple syrup, seasoning and bay leaf

Simmer for 20 minutes stirring occasionally

For a smooth sauce allow to cool, remove the bay leaf and blend

Serve this versatile nutrient-packed sauce over pasta, no one will know how good it is for them!
