Holiday Pumpkin Bread Vegan
Mix all the dry ingredients; 1/2 cup brown sugar + 1 tsp baking soda + 1 1/2 cup granulated sugar + 1 tbsp pumpkin pie spice + 1 tsp baking powder.

Mix thoroughly & set aside.

Add 1 cup pumpkin puree + 1/2 cup vegetable oil + 1 tsp vanilla. Stir to mix in.

Put the pumpkin mixture in the bowl of a stand mixer & mix on medium. Add the dry ingredients 1/3 at a time.

After the last 1/3 scrape the sides & bottom of the bowl.

Add 1 cup of coarsely chopped pecans & mix in on medium.

Grease & line w/ parchment paper. 2 small loaf pans or 1 large loaf pan. Pour 1/2 of the mixture into each pan.

Bake for 60 minutes for the 2 smaller loaves or 90 minutes for the larger loaf.
