Place 10” cast iron skillet in oven and preheat to 425 degrees.

Whisk together 2 eggs, 1 c buttermilk, and 1/2 c sugar.

Add in 2 oz freshly grated cheddar cheese and 1/4 c melted butter.

In another bowl combine 1 c yellow cornmeal, 1 c flour, 1 tbsp baking soda, and 1/2 tsp salt.

Add dry ingredients to wet ingredients and combine.

Brush oil on preheated cast iron skillet and add batter. Bake for 25 minutes.
