Homemade Flour Tortillas
Add 2 cups of bread flour to a mixing bowl fitted with a dough hook.

Add 1 teaspoon baking powder and 1 teaspoon salt.

Add 1/4 cup vegetable shortening or lard.

Turn on low and stream in 3/4 cup hot water.

Knead for 6 minutes. Form into a large ball.

Cut 6-8 equal portions. Roll each into a ball and set to rest for 20 minutes.

Roll the dough balls out into a thin circle. Try to get the dough as thin as you can.

Carefully place the tortillas onto a preheated griddle over medium heat and cook for 1 minute.

When the tortillas bubble up, flip to cook the other side for 30 seconds. Continue to cook the rest of the tortillas.

Serve warm.
