Homemade Fortune Cookies
Preheat the oven to 375. Cut the fortunes.

Add one stick of butter to a microwave safe bowl. Microwave for 40 seconds to melt.

Add egg whites to a mixing bowl.

Add the sugar and beat with a hand mixer for 1 minute.

Add 3 tablespoons water, 1/2 teaspoon almond emulsion and the melted butter.

Mix to combine with the beaters.

Add 1 cup flour and mix to combine.

OPTIONAL: add 1/8 tsp gel food coloring.

Using a tablespoon, scoop the batter on a parchment lined baking sheet. Spread to form a 3 inch circle (Only do 2-4 at a time).

Bake for 6 minutes.

Remove from the oven and immediately fold into a semicircle, leaving a 1/2 inch opening on the end.

Slip the fortune inside and press the bottom softly onto a edge of a cup, folding down the edges. Immediately place in a muffin pan to hold.

OPTION: seal 3/4 of the fortune cookies with a spatula by pressing the edges down slightly. Then fill with sprinkles instead of the fortune.
