Homemade French Lentil Soup
Cook bacon in olive oil until crisp. Remove from pot with a slotted spoon and set aside.
Sauté carrots, leeks, and celery until soft. Add garlic, and cook for 1 minute, until fragrant.
Add red wine and cook for 1-2 minutes, scraping any browned bits from the bottom of the pot.
Stir in Puy lentils, followed by stock, water, thyme, bay leaf, reserved bacon, and kosher salt.
Bring to a boil, reduce heat, and simmer, partially covered for 25 minutes. Stir occasionally.
Stir in fresh escarole, bring to a boil, partially cover, and simmer 15-20 mins. Remove bay leaf.
Serve with a drizzle of extra virgin olive oil, cracked black pepper, and garlic croutons.
