Homemade Mac And Cheese
Bring a large pot of water to a boil.

Grate 8 ounces of gruyere cheese.

Place the cheese in a mixing bowl.

Grate 1 pound sharp cheddar cheese.

Place into the bowl.

Add 1 pound macaroni to the boiling water. Cook to package directions.

Preheat a large stockpot or Dutch oven over medium low heat. Add 4 tablespoons to melt.

Once the butter is melted add 1/4 cup flour and whisk to combine.

Cook for 1-2 minutes to cook out the flour taste and then add 2 cups milk.

Cook on medium low for 5 minutes to thicken. Then add the cheeses and stir to combine to melt the cheese.

Make sure the cheese is all melted.

Season with salt and pepper to taste.

Then add 1/4 teaspoon ground nutmeg. Stir to combine.

Carefully drain the macaroni in a colander.

Add the cooked and drained macaroni pasta to the sauce.

Toss to combine and fully coat the pasta in the sauce.

Serve immediately.

Or place in a baking dish and top with topping of choice. Broil for 3-5 minutes or until the crust is golden.
