Homemade Pear And Cheese Ravioli
Remove the skin off two pears and finely chop.

Smash the pear with the back of a fork or with your hands to create a paste.

Add the ricotta cheese, Italian cheese blend,cinnamon and salt and mix to combine. Taste for flavor.

Lightly flour the pasta. Cut the rested pasta dough into four pieces.

Flour the pasta. Take one of the pieces and roll on the widest setting. Fold and roll again.

Slowly increase the setting to a lower width.

Flour the dough every couple of rolls to prevent sticking. Keep lowering the setting.

Roll to a #6 setting on the pasta machine. The pasta should be paper thin.

Roll through twice at the number 6 setting.

Roll the rest of the sheets out. Add about 1 tablespoon of filling 1 inch apart on the pasta sheet.

Place a sheet of pasta on top of the filling.

Press to seal (from the filling out) to remove any air pockets.

Use a pasta press or cut with a knife into squares. Pinch the edges of the ravioli to seal.

If your pasta has too much flour on it, it won’t seal properly so brush off the excess with a brush.

If the raviolis aren’t sealing, brush the pasta with a little water on your finger and seal.

Freeze or cook immediately.
