Add the yeast, sugar flour & warm water to bowl & whisk- let stand until foamy 15-20 min

Then whisk in the olive oil, salt and add remaining flour

Mix on low speed, using a dough hook attachment, until dough is soft, and slightly sticky.

Still sticky

Stop and sprinkle in up to 1/4 cup of flour a little at a time

Just about there - after 5-7 minutes of kneading (by hand would take 7-10)

Pull sides under gently to form ball & then add to lightly greased bowl flip around to grease dough

Cover with plastic wrap & tea towel, place in warm spot & let rise 2 hours -or until double the size

Transfer to lightly floured work surface and flatten gently into a rectangle - and slice

Into 8 pieces - fold ends under to form balls

Let rest for 30 minutes

Flour work surface and lightly roll out into 5-7 inch rounds about 1/4 inch thick

Heat skillet, grease & place pita on it - grill 30 seconds then flip

After 30 seconds flip again and then grill another 1 - 1 1/2 min on each side

Once you see bubbles use your spatula to gently push them through the whole pita to create pockets
