Add the yeast to a mixing bowl.

Add warm water. Let sit for 5 minutes.

Add “00” flour or bread flour. Stir with your hand.

Add salt and knead for 5 minutes.

Cover the dough directly with Saran Wrap. Let sit for 24 hours at room Temperature.

After 24 hours. Transfer to the fridge for 48 hours.

When ready to cook break the dough into 2 to 3 separate balls. Stretch the dough.

Add a little flour to the pizza peel. Make sure the pizza can slide off the peel.

Par-cook the dough for 7 minutes in a 500 F oven.
