Homemade Raw Sauerkraut
Peel off a few clean outer leaves and reserve aside.

Finely chop or shred the cabbage.

Mix the salt in to the cabbage and squeeze until water starts to release.

Leave the cabbage to sit, covered, for 20 minutes. Massage it again for 5 minutes.

Pack in a clean glass jar. Press down firmly so water covers all material.

Cover with a cabbage leaf.

Add optional weights to hold everything under water.

Cover with a cheesecloth and secure with a rubber band or use a fancy air locking lid.

Wait at least 3 days, best after 4 weeks.
