Homemade Sage Flavored Pasta
Add flour and semolina flour to a clean work surface. Combine and create a well in the center.

Add one egg and one egg yolk to a bowl.

Add olive oil, minced sage leaves and salt to the eggs and whisk. Add to the center of your well.

With your fork, slowly add the flour in from the sides of the well and whisk to combine.

Sprinkle with a little flour (don’t add too much). Slowly knead the flour into the dough.

Knead in the flour until the dough is soft, but not sticky.

Press your fingers into the dough to see if the dough is sticky. If it is, knead in more flour.

Wrap the pasta dough in Saran Wrap and let rest for 30 minutes.

Lightly flour the dough. Cut into quarters.

Place the pasta machine on the widest setting. And run through. Fold the dough and run through.

Slowly move to a thinner setting. Running the pasta through the machine after each setting.

If the pasta starts to get sticky, dust with some flour.

Continue lowering the setting until you are at a level 6 thickness.

Place desired cutting insert into the kitchen aid.

Run the pasta through the attachment. Cook immediately or dust with flour and freeze.
