3 cup idly rice

1 cup whole urad daal 1/2 cup of poha

1/2 tbsp of methi seeds

Idly batter ingredients

Let’s wash and clean the rice (see technique)

Repeat the process 2 more times

Total 3 times

Soak the rice

Add 6 cups water

Add methi (fenugreek) seeds -catalyst

Mix well

Prepare whole urad daal (special technique)

Repeat the process 2 more times (total 3)

Add 3 cups water to soak

Soak Thick poha

Let’s cover and soak everything

For 8 hours

Let them do their thing

Nicely soaked rice for 8 hours

Let’s grind it into a fine paste

Add little water as needed

Nice,grainy thick flowing consistency batter

Add soaked poha! It aids the fermentation process

Pour the batter into the same bowl

Grind it into thick fine paste-add very little or no water

Fun -cold water test:scoop grinded urad daal into cold water(if it’s done it will flow up)

Let’s mix both the batter together

One last step -add salt and mix them using cut and fold method

Incorporate as much air as you can-making the batter airy and lite

Let’s checkout our fermented batter after 8 hours

For soft Idly’s use the top portion of the batter!

Add little oil

Transfer it over to the idly tray

Transfer it over to the steamer

Cook it for 15-18 mins

Tip -Sprinkle cold water over cooked idly to keep them extra soft

Remove idly from mould and enjoy with ghee,chutney and sambhar!
