Honey Apple Sausage Rolls
Preheat oven gas 6. I’m only going to use 4 sausages and 1/2 pack of puff pastry for these
1
Remove sausages from skin and pop in a bowl. Grate in the apple.
2
Add seasonings (I used ‘steak’ seasoning)
3
Salt + pepper
4
Mix it and combine; it should come together easily but it shouldn’t be too wet
6
If it feels a little wet add a handful of breadcrumbs
7
Separate into two rough balls
8
I’m only using half this pack so 250g puff pastry
9
Pop onto a floured worktop and roll out a wide rectangle about the thickness of a £1 coin
10
Cut into two pieces along the length
11
Grab your filling
12
Evenly run it through the pastry just off centre
13
Whisk your egg (I also added a small splash of milk to make it go further)
14
Brush onto the bottom section of the pastry
15
Fold the top section over onto the sausage. Keep it tight and free from air pockets
16
Roll it over to meet the bottom section. Press to seal.
17
Repeat. If you don’t have enough filling it doesn’t matter - just remove the excess pastry
18
Line a baking sheet with parchment
19
Slice as big/small as you like (just be even so the cook at the same time) & add small cuts on top.
20
Generously egg wash and pop into the oven for 15mins (they take 25min in total depending on size)
21
After 15mins they look like this
22
Repeat the egg wash and top with sesame seeds. Pop back into the oven for another 10mins
23
Let them cool a little for 10mins if you can wait that long!
