Honey Roasted Delicata Squash

Slice your squash in half lengthwise and scrape out pulp and seeds

Slice each half into approx 1/2 inch slices (skin intact- it’s edible)

Place in large bowl and drizzle over oil and honey

Sprinkle with salt and pepper, chili flakes and thyme & toss well

Spread squash evenly onto 2 large sheet pans

Sprinkle over garlic and roast

Once done transfer to serving dish and check seasoning (s&p) & finish off with extra honey drizzles

And sprinkle over some toasted chopped pecans & crumbled feta
