Hongkong Fish - Breaded Fish in Red Tomato Sauce
Take 500gm of fish fillets, squeeze half of fresh lemon with salt and pepper to taste.

Fish breading: Take 2 eggs, add 1tsp chilli flakes and 1tsp salt.

Take 4 tbsp of cornflour.

Take 1 cup of panko bread crumbs, you can use regular breadcrumbs or cornflakes also for coating.

To coat take a piece of fish, dip in the egg , then roll in cornflour to coat and then in egg again and finally in the bread crumbs

Refrigerate the breaded fish for 1-2 hours

Fry the breaded fish on medium heat until cooked or golden brown

Put the fried fish on a paper towel to drain excess oil, while we prepare the tomato sauce

Red tomato Sauce: Take 4 tomatoes, 2 large green chillies, 1/4 cup vinegar

Take the tomatoes and coarsely blend them with some chunks present in it

Take a pan, put oil add 1 small diced onion and sauté until translucent

Add the tomatoes to the onion and let it cook.

Add 1/4 cup vinegar, 1 tsp chilli flakes, salt and pepper according to taste

Cook for 10-15 mins until the tomatoes soften.

When the sauce is cooked, add chopped green chillies.

Next add 1/4 cup of tomato ketchup and mix well, cook for another 5 minutes and its ready!

Place your fried fish on a serving dish. Pour over the hot tomato sauce & serve with boiled/steamed rice
