How To Broil Skirt Steak In The Oven

Trim away the fat and connective tissue from your steak. One side is always worse.
Use a sharp knife and wiggle it under. Just get off what you can and don't stress.
Line a rimmed 9x13 or larger baking tray with foil or it can go right on the pan if you don't use foil.
Drizzle the steak with avocado oil on both sides (it's safe for high heat). A couple tablespoons is plenty.
Sprinkle well with salt and pepper and rub it on evenly.
Move your top oven rack as close to the broiler as possible. Broil to 135 for rare. About 5 minutes per side. Move your rack down if it smokes.
Bring the foil around the steak and let it rest 10 minutes before slicing so it stays juicy!
Notice which way the lines (grain) are going in your meat. Cut across them for tender slices.
