How To Form Small Buns (or Rolls)
Punch down the dough and transfer to a clean surface

Cut small pieces of dough; eyeball the size or weigh it to have buns of the same size

To form: flatten a piece, fold inward pinching the seams and roll to make a bun

You can do it with both hands

Place in the pan that is sprinkled with oats, polenta, or flour

Let rise for the last time

Bake as directed and let cool on a wire rack
