Grab your puff pastry, butternut squash and mushrooms and create an elegant vegetarian entree!!

Roast your squash till almost fork tender

While the squash is roasting, sauté the mushrooms. Be sure liquid has evaporated.

"Dock" your dough which means poke holes in it lightly with a fork

Spread your cooked mushrooms on the pastry leaving a strip of dough all the way around

Now layer the butternut squash on the mushrooms

Then add the goat cheese (cheese and then squash also works)

Brush the edges with the egg wash

Roll each side to the middle. If your pastry is getting warm, pop it in the fridge before doing this

Crimp the ends closed with a fork and turn it over

Optionally, lightly score the dough to create a pretty pattern

Then egg wash the whole Wellington and bake at 400 degrees for 30 minutes
