How To Make Andes Mint Brownies
First, you will need to preheat your oven to 350° F and spray your 8x8 pan to prevent sticking.

After you do that you will want to gather all of you ingredients together.

To start the brownies you should add butter and both sugars to a medium saucepan and stir until melted.

Now, take off the heat and stir in chocolate chips until melted.

Then, add eggs and vanilla to a medium bowl. Whisk to combine.

Now, stir 1 teaspoon of the chocolate mixture into the egg mixture to temper the eggs. Continue this until all of the chocolate mixture is gone.

Next, combine flour, salt, and cocoa powder in a large bowl.

Now gently fold together the chocolate mixture and the dry ingredients being careful not to over mix. You can add extra chocolate if you want.

Add your batter to a pan and set it in the oven to bake. (25-30 minutes) While that is baking you can get your frosting started.

First, you will want to add butter to a stand mixer and beat until it is fluffy

Add in powdered sugar, milk and peppermint extract. Beat until thick and creamy. Add milk/ powdered sugar to fix consistency as needed.

Now that your brownies are cool you can put frosting on them

And voilà! Now you can enjoy some delicious brownies by yourself or to share!
