In one bowl, combine flour, brown sugar, salt, baking powder and baking soda. Stir to combine.

In second bowl, combine egg whites, bananas and vanilla. Stir until well combined.

Add butter to flour mixture. Cut butter into flour until it resembles coarse meal texture.

Add banana mixture to flour and stir until almost all combined.

Next, get in there with your hands. In the bowl or on a counter knead to get flour incorporated.

Shape into a 9 inch circle and place onto a lightly greased baking sheet.

Top with brown sugar and lightly press into dough.

Score into 12 sections using a knife. Do not cut all the way through.

Let cool and then serve. Cut along score marks for 12 scones.
