How To Make Cajun Fries
Grab 5 large potatoes, canola oil, 1 tbsp. each of paprika, garlic powder, oregano and cumin, 1.5 tsp. salt, 1 tsp. pepper and 1 tsp. cayenne.

Clean the potatoes.

Cut potatoes into wedges.

Place them in a large heat-proof bowl and pour boiling water over the potatoes. Let sit for 20 mins.

Mix all spices together.

Preheat oven to 475ºF. Drain the potatoes and pat them dry.

Grease a silicone mat or foil on top of a sheet pan.

Sprinkle some of the Cajun seasoning on top.

Mix the wedges with 2 tbsp. canola oil.

Add the remaining Cajun spices and mix evenly.

Layer the wedges onto the pan.

Bake for 20 mins.

Flip and bake another 10 to 20 mins, until golden and crispy.
