How To Make Carne Asada
Place the meat into a ziploc plastic baggie. I’m going to make one and then freeze one for later.

For the marinade place three teaspoons minced garlic into the bag.

Zest one orange over a small bowl. Make sure to rotate the orange to just get the zest.

Zest two limes into the bowl.

Slice the limes and oranges in half.

Juice 2 oranges and 2 limes into the bowl. I like to use a hand juicer to get all the juice out easily.

Add 1 tsp garlic salt, 1 tsp oregano, 1/4 tsp cumin, 1/2 tsp chili powder and 2 tsp kosher salt.

Add the marinade to the meat. Remove any air from the baggie and seal.

Place in a dish and refrigerate for 6 hours or overnight.

When you are ready to cook preheat a grill pan over medium high heat. Remove the meat from the marinade and place on the grill. Sear for 5 minutes.

When you see nice grill marks rotate the meat 45 degrees and sear for another 3-5 minutes.

Flip the steak and grill for 5 minutes.

Then rotate the steak another 45 degrees and cook for 3-5 additional minutes.

Remove the steak and let rest for 5 minutes. Look for the grains of the meat.

Slice the steak across the grain of the meat into thin small slices.

Serve the steak in tortillas with cilantro and onion.
