How To Make Chocolate Cremeux
120g heavy cream, 240g milk, 75g granulated sugar, 3 egg yolks, and 180g semi sweet chocolate 🍫

Pour milk, heavy cream, and 37g of the sugar in pot to boil

Whisk egg yolks with the remaining sugar

Once the cream mix comes to a boil take 1/4 cup and add to the yolk mix

Whisk in the cream mix

Add the tempered yolk mix to the cream mix

Leave on heat until it reaches 183F

Remove from heat and add chocolate 🍫

Stir until smooth

Prepare to pour

Transfer to cups

Refrigerate 2-4 hours

Take out of refrigerator. I made some cocoa streusel to go on top
