How To Make Cultured Ghee From Cultured Butter
Pour 1 Quart Heavy Whipping Cream into a Heavy Bottomed Pot

Heat it gently to warm it up

It should take 2-3 minutes. It shouldn’t be boiling hot but slightly warm

Add 2 tablespoons of Yogurt to this warm cream & mix

I used the Instant Pot’s Yogurt Setting to ferment the mixture

Set it aside for a minimum of 8 hours or overnight

After 10 hours, this looks set like yogurt. This will not be as thick as yogurt but will be dense

Set it aside in the refrigerator for 1-2 hours or you can add ice cubes while whisking

After 1-2 hours, use an electric whisk to whisk the yogurt

It starts to thicken

After 7-8 minute, it reaches a whipped cream consistency

Continue Whisking

After 7-8 minutes, you will notice that the butter starts separating. Continue Whisking for another minute or two

Butter separates from buttermilk. Scoop out the butter. Squeeze our all the buttermilk as much as possible

Wash in 2-3 changes of water

This is Cultured Butter

Strain Buttermilk & Set Aside to be used later

You can store this butter in an air tight container for 2-3 weeks

Let’s make Ghee from this Cultured Butter. Heat butter in an heavy bottomed pot

Add 1/4 teaspoon Turmeric powder

Add 4-5 Grains of Methi Seeds. This is optional but imparts a subtle flavour

Once the Butter Starts Melting it gets really got so simmer on low - medium flame

It takes 12-15 minutes for milk solids to separate

Milk solids begin separating

Keep an eye because you don’t want the milk solids to burn

Note: Not all store bought Butter is cultured unless specified on the package

You will notice the liquid getting clear

The liquid gets clear & milk solids settle at the bottom

Don’t allow the milk solids to burn. Simmer on low flame

At This stage you get clarified butter

You need to simmer this for another couple of minutes

The liquid begins to turn darker

And will become a golden yellow or honey coloured liquid

Then it begins to turn frothy again

At This stage, turn off the heat & take the pot off & place on a trivet. Allow it to cool

Upon cooling Strain into an airtight jar. I got 270 grams of Ghee from 1 Qt Heavy Whipping Cream
