How To Make Focaccia Bread
Mix yeast, sugar, half the flour, and water. Let rest several minutes.

Add the rest of the flour, the salt and the olive oil.

Knead for 5-8 minutes (by hand or stand mixer) until a smooth dough forms.

Cover and let rise until doubled (about 1 hour) in a warm, draft-free place.

Punch the dough down and transfer to an oiled baking pan.

Stretch it to cover the whole pan without forcing it, allowing it to rest a few minutes if too elastic. Let rise again.

Dimple the whole surface with your hands. This step is important.

Drizzle with a generous dose of good olive oil.

Sprinkle with some sea salt.

Leave plain or top with tomatoes and herbs if you want.
