You will need: Potatoes!

Wash, peel, and slice the potatoes like so.

Toss the potatoes in salt and let rest for 15-20 minutes.

Discard the starch, rinse the salt off, and soak them in cold water for 30 minutes.

Place them in a pot of room temperature water and bring them up to the boil.

Once potatoes are par-boiled, drain and let them cool slightly.

Lay them out in a single layer (to stop from clumping together) and freeze them for 2-4 hours minimum.

Make sure they're completely frozen!

You can transfer them to a freezer-safe bag once frozen if you plan to fry them later.

Heat oil in a pan and fry the potatoes in batches until golden brown. Note: do not let the fries thaw!
